Plain and simple yet oh so delicious Smoked Salmon Pasta -

serves 2-3 people
Ingredients:
50ml butter
50ml flour
400ml milk
small onion chopped
200g smoked salmon
a few capers chopped
lemon juice
salt and pepper to taste
pasta of your choice
directions:
melt butter and add onions. Saute until al dente.
Remove off heat and stir in flour. Place back on heat for a few seconds to pop any starch bubbles.
Remove from heat and gradually add milk. stirring all the time. Place back on heat and stir all the time until starts to thicken.
Add smoked salmon and capers and stir.
add a dash of lemon juice and salt and pepper to taste.
cook pasta (follow directions on packet)
Mix all together and enjoy.
STRAWBERRY SPINACH SALAD - Impress your friends with this Royal Wedding Salad
1 family size packet spinich
1 sliced celery (cut on diagonal)
1 packet strawberries
CARAMELIZED PECANS:
1 cup sugar
1 cup pecans
POPPY SEED DRESSING:
2/3 cup vinegar
4 onions, chopped
2 cups salad oil
1/2 cups. sugar
2 tsp. salt
2 tsp. dry mustard
3 tbsp. poppy seed
Combine sugar and pecans in heavy skillet. Slowly cook until all sugar has melted onto pecans and they are browned. Immediately place on waxed paper. Cool.
Combine sugar, salt, mustard, vinegar and onions in blender. Slowly add oil. Stir in poppy seeds. Refrigerate.
Combine spinach, celery, pecans and strawberries. Coat with dressing. Toss gently.
