Peanut Butter Brittle

Peanut Butter Brittle



Unsalted butter, softened for baking sheet

2 cups of sugar

1 and half cups of salted peanuts (can use almonds or cashews instead)

Half a cup of water

Pinch of salt

Vegetable oil (for the metal spatula)



  1. Butter a rimmed baking sheet and set aside.  Stir the sugar, water and salt together in a medium saucepan.  Cook over high heat without any stirring until the sugar begins to melt and turns golden (about 3 minutes)
  2. Continue to cook, stirring occasionally until the sugar has melted and mixture turns golden amber. (about 10 minutes).
  3. Remove the pan from the heat and stir in the nuts.  Immediately pour the nut mixture onto a buttered baking sheet.
  4. Quickly spread the mixture to 1 and half cm thickness using the oiled spatula.
  5. Let it cool completely for about 15 minutes.
  6. Break the brittle into pieces.  This can be stored in an airtight container for up to 2 weeks.
